If there's one food that begs to be photographed, it is the famed smoothie bowl in all of its artistic, frozen, nutritious glory. The fruity base is the perfect canvas for food bloggers to let loose and get creative.
Ingredients matter here. If you're not careful, you can easily blend together the sugar-equivalent of a bowl of ice cream.
To avoid an unintentional sugar-overload, I bulk up my smoothies with vegetables and protein powder (I like Vega and Bulletproof protein). Spinach, Kale, Cucumber, Carrot, you name it - all are delicious when combined with fruits, ice, and your favorite non-dairy milk.
Here is my favorite recipe for a stellar PB&J smoothie bowl that is the perfect replacement for when you are craving something frozen and sweet and have run out of ice cream don't want to sacrifice calories.
Now, I have a confession - when it comes to cooking, I am pretty much whatever the opposite of type-A is, so I am definitely not one to measure exact ingredients. The measurements below are approximations; I encourage you to play with the ingredients to find the best consistency and flavor for your own taste!
In your blender, add:
2 C Coconut Milk
1 C Ice
1 Tbsp Cinnamon
1 Scoop Protein Powder
1 Tbsp Peanut Butter
1 Tbsp Flax Seed
1 Tbsp Chia Seed
1/4 C Almonds
Optional: for a more creamy/yogurt-y smoothie, add:
1 C Yogurt (I like plain Goat's milk yogurt or plain 2% Greek yogurt)
Throw all of the ingredients into your blender. Blend. Add more liquid or ice to reach desired consistency. Pour into bowl and arrange toppings. Feel proud of your artwork. Post a photo to instagram, probably. Feel guilty ruining your creation with a spoon.
Some of my favorite toppings to play with:
sliced fruit, hemp seed, goji berries, low-sugar granola, a drizzle of raw honey, cinnamon, cacao nibs.
